Salmis de pigeon

Pigeons are viewed as pests and are fair game for trigger happy farmers. Not everyone thinks that way and here we have a specially built dovecote and its happy residents.

Pigeon makes a delicious pie, the breast meat simmered slowly in white wine, with peas, shallots, garlic and thyme, the filling then covered in a buttery pastry and baked. Farmers usually give the birds away for make good use of them.
